Buffalo Whole Roasted Cauliflower

Ingredients

  • Cauliflower
  • Olive oil
  • Buffalo Sauce – I used one from Whole Foods which was preservative free and no added sugars. Brand: Wing Time
  • Popcorn/almonds to garnish and for fun!

Instructions

  1. **THIS IS KEY!!!*** To get the cauliflower soft in the middle, you must boil it first! Boil a pot of water- place whole cauliflower upside down for about 10 to 12 minutes. Remove from water, pat to dry.
  2. Use the fork to poke small openings around the cauliflower and lather with olive oil.
  3. Coat entire outside of cauliflower with the buffalo sauce.
  4. Preheat oven to 400, bake for 25-35 minutes.

Notes

The cauliflower should be easy to slice with a knife.
