I have heard about chickpea “tuna” for quite some time but never got the urge to try it myself.

I am beating myself up because this would have been a staple during my vegan college years!  It’s easy, delicious, protein-packed, and provides such a satisfying texture.  That extra crunch is KEY!

Crunchy Chickpea “TUNA” Salad

Ingredients

Scale
  • 1 can of chickpeas
  • 1 bag of sea salt Biena Chickpeas
  • 1/4 cup Chipotle Fabanaise (vegan mayonnaise made from the water from chickpeas)
  • 1/4 cup shredded carrots
  • Cracked black pepper to taste

Instructions

  1. Combine all ingredients into a food processor and blend for just a few seconds. You don’t want it to turn to mush
  2. Add it on salad, or enjoy on a sandwich
  3. Thank me later πŸ™‚
