The crowd went wild when I posted these healthy (banana-based) vegan and gluten-free Baked Chocolate Chip Doughnuts on Instagram earlier this week.  I have to admit, I expected no less.  They are, after all, baked chocolate chip doughnuts!!

First of all, they are super Instagram-friendly. They are also filled with chocolate chips, dusted with melted chocolate, and topped with organic sprinkles.  While they probably won’t last in your house for more than a few days, I can attest that these are still fresh after five days ( AT LEAST) if kept in the refrigerator.  I also traveled with 3 of them, and they didn’t crumble.

Bonus: Most noteworthy, these baked chocolate chip doughnuts contain NO preservatives. NO chemical baking agents, and are made with just 5 INGREDIENTS that you probably already have lying around.

This is the doughnut tray I used.  It’s great and can be used for making homemade regular bagels, or grain-free bagels.

Lastly, I used THESE sprinkles, which is the only brand I can find right now that contains natural coloring and no palm oil.

Baked Chocolate Chip Doughnuts

Description

Ingredients

Units Scale

3 ripe bananas
23 tablespoons almond butter
1 cup almond flour
1/3 cup chocolate chips
1 tsp vanilla extract


Instructions

In a large mixing bowl, mash the banana
Add in the remaining ingredients and stir batter well
Fill doughnut tray with batter
Bake at 375 degrees F for 30-40 minutes
Let cool before removing from tray.
If choosing to top, drizzle melted chocolate and add sprinkles before the chocolate hardens
