If you like steamed cauliflower with a dash of salt and pepper, good for you! But if you’re like most, you consider cauliflower to be on the drab side. But it doesn’t have to be a boring vegetable.
There are so many awesome things to do with this veggie, that I decided to challenge The Toasted Pine Nut to a cauliflower face-off.
This week we’re sharing some crazy delicious cauliflower recipes that will blow your mind.
So why all the love on cauliflower? Well, it silently packs in a ton of vitamin C, making it great for immunity as these winter months begin to roll around in NYC. It also fights against inflammation, protects against cancer, and is low calorie and low carb. A great choice for those that like to eat volume but are still trying to lose weight or are diabetic.
Let’s kick it off right with the Whole Roasted Buffalo Cauliflower! As always, five ingredients or less, and easy as can be!
Buffalo Sauce – I used one from Whole Foods which was preservative free and no added sugars. Brand: Wing Time
Popcorn/almonds to garnish and for fun!
Instructions
**THIS IS KEY!!!*** To get the cauliflower soft in the middle, you must boil it first! Boil a pot of water- place whole cauliflower upside down for about 10 to 12 minutes. Remove from water, pat to dry.
Use the fork to poke small openings around the cauliflower and lather with olive oil.
Coat entire outside of cauliflower with the buffalo sauce.
Preheat oven to 400, bake for 25-35 minutes.
Notes
The cauliflower should be easy to slice with a knife.
This different from many I have seen because its gluten free (no breading), not fried, and vegan. It is flavor packed and the ultimate surprise.
