Tiger nuts are NOT a nut, they’re a root vegetable and high in resistant starch. But most importantly- they taste incredible. Naturally sweet– but not too sweet. 

Feel free to double or triple this recipe to make a bigger batch 🙂  I hope you like.

Chocolate Chip Tiger Nut Flour Cookies

Ingredients

Units Scale

1 cup Tigernut flour
3/4 cup almond flour
1/2 cup vanilla unsweetened almond milk
1 tsp baking powder
1/4 cup chocolate chips


Instructions

Preheat the oven to 375 degrees F
Combine all the dry ingredients in a bowl
Add in the liquid and mix well
Roll into balls about the size of a ping pong ball
Flatten to about 1/2 inch high with palm as you place onto the baking tray
Bake for 15-20 minutes
Enjoy!
