- 1 cup chickpeas, canned
- 1 cup shelled pistachios (optional)
- 1 tablespoon coconut oil
- 1 teaspoon cayenne pepper
- 1/2 cup dried Montmorency tart cherries
- 1/4 cup chocolate chips
Instructions
- Preheat the oven to 400 degrees F
- Rinse chickpeas in water, removing all skins + pat dry with towel
- Place chickpeas, pistachios, coconut oil and cayenne in a bowl and mix well
- Line a baking tray with parchment paper, spread mix evenly and bake for 20 minutes (watch closely)
- Remove from oven and let cool
- Once cool, mix in tart cherries and chocolate chips
- Enjoy!
Notes
Pro tip: Make a batch once or twice a week and keep in airtight containers or baggies for when you want to run out the door!
