Vegan Cauliflower Toasts

Ingredients

  • 1 cauliflower head
  • 2 chia eggs (2 tablespoons chia seeds, 3 tablespoons water)
  • 1 tsp onion powder
  • (optional) 1 tsp garlic powder/minced garlic
  • 2 heaping tablespoons of nutritional yeast
  • tsp salt/tsp pepper

Instructions

  1. In a food processor, “rice” up the cauliflower- simply place in processor and grind
  2. Place cauliflower in a pot with 1/2 cup water to soften.
  3. Drain cauliflower, removing as much water as possible with a cheese cloth
  4. In a bowl, combine cauliflower, and rest of the ingredients.
  5. Bake at 400-450 degrees for 30-45 minutes.

Notes

Note, these are extremely delicate, but harden if left out for a few hours!

Top as you please.  I went with guacamole, tahini, and some vegan cream cheese!
